Ingredients

  • 1 lb 1 Ground Beef

  • 1/2 cup 1/2 Whole Milk

  • 1/2 Cup 1/2 Bread Crumbs

  • 8 oz 8 Cremini Mushrooms

  • 1/2 Cup 1/2 Grated Manchego Cheese or Parmesan Cheese

  • 1 1 Clove Garlic, minced

  • 3 tbsp 3 Parsley, Minced

  • 1 tsp 1 Black Pepper

  • 3 tbsp 3 Salt

  • 1 1 Large Egg

  • 1/4 cup 1/4 Slice of Ham, cubed

  • 2 tbsp 2 Extra virgin oil

  • 5 5 Slices of Mozzarella

Directions

  • Clean and finely chop the cremini mushrooms. In a skillet, add olive oil, minced garlic, and parsley sauté for 5 minutes. Add the mushrooms and 1 tbsp of salt. Cook until tender and most of the liquid has evaporated. Let cool slightly.
  • Preheat the oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease it with olive oil.
  • In a large bowl, combine the ground beef, egg, bread crumbs, grated cheese, ham, milk, salt, and black pepper. Add the cooled mushrooms and mix gently until everything is well incorporated. Don’t overmix or the meatloaf will be dense.
  • Transfer half of the meat mixture into the prepared loaf pan and press it down evenly.
    Arrange the slices of mozzarella on top, then seal the edges so the mozzarella stays inside.
  • Place the loaf in the preheated oven and bake for about 45–50 minutes, or until the internal temperature reaches 160°F (71°C) and the top is golden.
  • Let the meatloaf rest for 10 minutes before slicing.
