Ingredients
1 lb 1 Ground Beef
1 Cup 1 Parmesan Cheese
1 cup 1 Breadcrumbs
1/2 Cup 1/2 Milk
3 3 Cloves of Garlic
2 2 Eggs
1 tbsp 1 salt
1/4 tsp 1/4 Black Pepper
3 3 Large Bell Peppers (yellow, red, or orange), sliced
2 tbsp 2 Extra Virgin Oil
Directions
- In a large bowl, combine ground meat, breadcrumbs, Parmesan, milk, egg, minced garlic, salt, and pepper. Mix until just combined.
- Form the mixture into small meatballs (about 1–1.5 inches in diameter).
- Heat 2 tbsp olive oil in a large skillet over medium heat. Sauté the garlic until fragrant. Add the sliced bell peppers and cook for 5–7 minutes until slightly softened. Add some water if needed. Season with salt and pepper.
- Add the meatballs to the skillet, nestling them among the bell peppers.
- Cover and cook on low heat for 10–15 minutes, until meatballs are cooked through and peppers are tender. Add 1/4 cup of water to create a nice sauce.
