Creamy Pasta with Smoked Salmon and Zucchini

Ingredients
2 2 Medium Zucchini
12 oz 12 Pasta Farfalle
4 oz 4 Smoked Salmon
1 Cup 1 Cup Cooking Cream
1/2 1/2 Onion
2 tbsp 2 Extra Virgin Oil
2 tbsp 2 Dry White Wine
Directions
- Cube the zucchini into small, even pieces and set them aside. (1) Finely chop the onion. (2) Heat the olive oil over medium heat in a large skillet. Add the chopped onion and sauté for 2–3 minutes until soft and translucent. (3)

- Add the cubed zucchini to the skillet with the onion. (4) Season lightly with salt. Cook for about 12-15 minutes, stirring occasionally, until the zucchini is tender and starting to turn golden. Add some water to help them soften.

- Slice the smoked salmon into little strips. (5) Add the sliced smoked salmon and cook for about 1 minute to warm it through. (6)

- Pour in the white wine and let it evaporate for a couple of minutes. (7) Lower the heat. Pour in the cooking cream and mix well. (8) Let the sauce simmer gently while you prepare the pasta. (9)
- Meanwhile, bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until it is al dente. Reserve about ½ cup of pasta water before draining.
- Add the drained pasta to the skillet with the sauce. (10) Toss everything together, adding a splash of reserved pasta water to make the sauce silky and coat the pasta evenly. (11) Plate the past AND ENJOY! (12)
