Ingredients

  • 2 lb 900 g Stew Beef

  • 1 cup 145 g Frozen Green Peas

  • 1 1 Carrot

  • 1 1 Celery

  • 1 1 Small Onion

  • 1 1 Clove of Garlic

  • 2 tbsp 28 g Extra Virgin Olive Oil

  • 2 cup 500 Vegetable Broth

  • 1 tbsp 16 g Tomato Paste

  • 1/2 cup 100 g White Wine or Beer

  • Salt to taste

  • Black pepper to taste

  • 1 cup 1 cup Flour

  • Fresh Rosemery

Directions

  • Dice the onion, carrot, and celery finely. Cut the beef into bite-sized cubes and lightly coat them with flour, shaking off the excess.Vegetable mix
  • Heat a drizzle of extra virgin olive oil in a large pot over medium heat. Add the chopped onion, carrot, and celery, and sauté for a few minutes until softened.Sautè the mixed Vegetables
  • Add the floured beef pieces to the pot and sear them on all sides until they develop a golden crust.Stew flour
  • Pour in the white wine and let it evaporate, scraping the bottom of the pot with a wooden spoon to release any flavorful bits.Adding wine
  • Stir in the tomato paste, then pour in the vegetable broth—season with 1 tbsp salt and black pepper.Adding vegetable broth
  • Cover and let the stew cook over low heat for about 1.5 to 2 hours, stirring occasionally. If needed, add more broth to keep it from drying out.
  • Add the peas and mix well about 20 minutes before the stew is ready. Let everything cook together without the lid until the peas are tender and the meat is soft.Adding peas
  • Taste and adjust salt and pepper if needed. Let the stew rest for a few minutes before serving.
