Ingredients

  • 8 Zucchini Flowers

  • Batter
  • Dry yeast (one packet) or 0.53 ounces of Fresh Yeast

  • 1 cup of All-Purpose Flour

  • 1 cup of Lukewarm Water

  • 1 teaspoon of Salt

  • 1 teaspoon of Sugar

  • Filling
  • 2 cups of Whole Milk Ricotta

  • 6 thin slices of Salami or Capicolla

  • Black Pepper to taste

  • ½ cup diced Mozzarella

Directions

  • Gently rinse the zucchini flowers under cold water and pat them dry with a paper towel. Carefully remove the pistil from the inside of each flower and set them aside.Pistils that need to be removed from the zucchini Flowers
  • Make the batter
  • Dissolve the fresh or dry yeast in a small portion of the 1 cup of water. Allow it to dissolve completely.

  • Let it rest covered with a platic foil for about 30 minutes, allowing it to rise.
  • Prepare the Filling & Stuff the Zucchini Flowers
  • In another bowl, mix the whole milk ricotta, diced salami or capicola, black pepper, and diced mozzarella. Combine until all the ingredients are well incorporated.
  • Carefully stuff each zucchini flower with the ricotta and salami (or capicolla) mixture being careful not to tear the petals (you can use either a spoon or a sac a poche). Stuffing the zucchini flowers with the ricotta
  • Gently twist the petals to close the flowers, securing the filling inside.
