Ingredients
1 Cups 1 Dry Chickpeas soaked overnight (or 1 can, drained and rinsed)
3 tbsp 3 Extra Virgin Olive Oil
1 1 Carrot
1 1 Celery Stalk
2 2 Cloves Garlic
4 Cups 4 Vegetable Broth or Water
1 1 Sprig Fresh Rosemary (or ½ tsp dried)
2 tbsp 2 Salt
Black Pepper to taste
Directions
- Dice the carrot and celery into small cubes.
- In a large pot, heat the olive oil over medium heat. Add the carrot and celery. Cook for about 5 minutes until the vegetables are soft and fragrant.
- Stir in the garlic, rosemary, salt, and black pepper if using. Cook for 1–2 minutes until fragrant.
- Add the chickpeas and pour in the vegetable broth or water. Bring to a boil, then reduce the heat and simmer gently for 40–45 minutes.
- For a creamier soup, mash a few chickpeas with the back of a spoon and stir. Taste and adjust salt and pepper as needed.
- Ladle the soup into bowls. Drizzle with extra virgin olive oil and sprinkle with Parmesan, or serve with toasted bread for a hearty meal.
