Ingredients

  • 1 Cups 1 Dry Chickpeas soaked overnight (or 1 can, drained and rinsed)

  • 3 tbsp 3 Extra Virgin Olive Oil

  • 1 1 Carrot

  • 1 1 Celery Stalk

  • 2 2 Cloves Garlic

  • 4 Cups 4 Vegetable Broth or Water

  • 1 1 Sprig Fresh Rosemary (or ½ tsp dried)

  • 2 tbsp 2 Salt

  • Black Pepper to taste

Directions

  • Dice the carrot and celery into small cubes.
  • In a large pot, heat the olive oil over medium heat. Add the carrot and celery. Cook for about 5 minutes until the vegetables are soft and fragrant.
  • Stir in the garlic, rosemary, salt, and black pepper if using. Cook for 1–2 minutes until fragrant.
  • Add the chickpeas and pour in the vegetable broth or water. Bring to a boil, then reduce the heat and simmer gently for 40–45 minutes.
  • For a creamier soup, mash a few chickpeas with the back of a spoon and stir. Taste and adjust salt and pepper as needed.
  • Ladle the soup into bowls. Drizzle with extra virgin olive oil and sprinkle with Parmesan, or serve with toasted bread for a hearty meal.
