  1. Choose Ripe but Firm Peaches: Very soft peaches contain more juice and can make the cake wetter. Choose peaches that are ripe and fragrant but still firm enough to slice.
  2. Don’t skip the sugar on top: That little sprinkle of granulated sugar helps create a beautiful golden, slightly caramelized crust around the peaches.
  3. Greek yogurt or ricotta? Both work beautifully. Greek yogurt gives the cake a slightly lighter, moist texture and a subtle tang. Ricotta makes it a little richer and gives the cake a wonderfully soft, tender crumb.
  4. Don’t overmix the batter: Once you add the flour, mix only until the ingredients are combined. Overmixing can make the cake dense.
  5. Check the center: Fresh peaches release moisture as they bake, so the cake may need a little longer than a traditional plain cake. Always check the center with a toothpick before removing it from the oven.

Can I Use Canned or Frozen Peaches?

Fresh peaches are best for this recipe, especially for the beautiful peach arrangement on top.

Ingredients

  • 6 6 Peaches

  • 3/4 cup 3/4 Granulated Sugar

  • 3 3 Large Eggs

  • 1/2 cup 1/2 Vegetable Oil

  • 2 cups 2 All-Purpose Flour

  • 1 tbsp 1 Vanilla Extract

  • 1 tsp 1 Lemon Zest

  • 4 tsp 4 Baking Powder

  • 1 cup 1 Greek Yogurt or Whole milk Ricotta

  • 2 tbsp 2 Brown Sugar

  • 1 tbsp 1 Unsalted Butter

  • Powdered sugar, for dusting

Directions

  • Wash the peaches and remove the pits. Remove the skin and dice 4 peaches into small pieces for the batter.
    Thinly slice the remaining two peaches for the top of the cake, leaving the skin on.
  • Preheat the oven to 350ยฐF. Grease a 9-inch (23 cm) round cake pan with butter and sprinkle with flour.
  • In a large bowl, beat the eggs and sugar until light and slightly creamy. Gradually add the oil while mixing. Add the Greek yogurt or ricotta and mix until smooth. Add the lemon zest and vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
  • Gently fold the diced peaches into the batter with a spatula, making sure they are evenly distributed. The batter will be fairly thick. This is what helps support the fresh peaches as the cake bakes.
  • Pour the batter into the prepared cake pan and smooth the top. Arrange the thinly sliced peaches over the surface. Arrange them in a spiral pattern, starting from the outside and working toward the center. This gives the cake that beautiful rose-like appearance when it comes out of the oven.
  • Sprinkle 1โ€“2 tablespoons of brown sugar evenly over the peaches and surface of the cake.
  • Bake at 350ยฐF (180ยฐC) for approximately 40โ€“50 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs. Because peach moisture varies, start checking the cake around 40 minutes. If the top browns too quickly while the center still needs time, loosely cover it with aluminum foil for the rest of the bake.
  • Allow the cake to cool in the pan for about 10โ€“15 minutes, then transfer it to a wire rack to cool completely.
    Once cooled, dust generously with powdered sugar before serving.
