Ingredients
1 Cup 1 Dried Green Lentils, rinsed
1 1 Large Carrot
1 1 Large Celery Stalk
1 1 Small Onion
1 tbsp 1 Thyme
1 1 Sage Sprig
1 1 Clove of garlic
5 5 Cherry Tomatoes
4 Cups 4 Vegetable Broth or Water
3 tbsp 3 Extra Virgin Oil
1 1 Rosemary Sprig
Grated Parmesan Cheese for serving (optional)
2 tbsp 2 Salt
Black Pepper to taste
Directions
- Peel and finely chop the onion, garlic, carrot, and celery.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, celery, and garlic. Cook for 5–6 minutes, stirring occasionally, until the vegetables soften and release their aroma.
- Add the rinsed lentils and diced potato to the pot. Stir well to coat everything with the oil and vegetables. Add the sage, thyme, rosemary, salt, and pepper (if using).
- Add the broth or Water, then bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover partially, and let it simmer for 30–40 minutes, until the lentils are tender. Stir occasionally and add more water if needed.
- Remove the sage and rosemary sprig. Taste and adjust seasoning. Serve hot, drizzled with extra-virgin olive oil and sprinkled with Parmesan cheese if you like.
Notes
- Enjoy your Lentil Soup with crusty bread or toasted crostini. It’s hearty and healthy, and the flavors deepen the next day, making it even better.
- You can freeze the lentil soup or store in the fridge for couple days.
