Ingredients

  • 3 Large Red Bell Peppers

  • 1 Green Large Bell Pepper

  • 1/2 Pitted Calamata or Gaeta Olives

  • 1 Clove of Garlic Peeled

  • 1 Tablespoon of Cappers Salted or Unsalted

  • 2 Tablespoons of Olive Oil

  • 1/4 Cup of Chopped Parsley (Optional)

  • 1 Cup of Water
    Salt to taste

Directions

  • Start by washing the bell peppers thoroughly. Cut off the tops, remove the seeds, and slice them into 1/2-inch thick strips.Cutting the bell peppers in slices
  • Heat a sauté pan over medium-high heat, then add the 2 tablespoons of extra-virgin olive oil.Adding the olive oil in the pan
  • Incorporate the garlic, the pitted black olives, the parsley, and capers (rinse them under cool water if they are salted) into the pan. Let them mingle for a moment.Adding the olives, cappers and garlic
  • Keep the heat at medium-high and let the flavors meld as you stir the ingredients.
  • Once the aromatics are fragrant and the garlic is golden, remove it and introduce the sliced bell peppers into the sauté pan. Stir to coat them with the flavorful mixtureAdding the bell peppers
  • After 5 minutes of sautéing, add 1/2 cup of water to the pan (1) and reduce the heat to low. Cover it with a lid (2) and allow the bell peppers to cook for about 20 minutes, or until they start to soften. Stir occasionally, ensuring there’s enough moisture in the pan to prevent sticking.Adding water to the bell peppersn
  • As the bell peppers become tender, remove the lid and continue to sauté them for an additional 5-10 minutes, or until the water has mostly evaporated. This is the crucial caramelization step where the bell peppers will turn beautifully golden brown at the edges.
