Ingredients

  • 2 2 Medium Lobster Tail, cut in half lengthwise

  • Half cup Half Cherry Tomatoes

  • 12 oz 12 Spaghetti

  • 6 tbsp 6 Extra Virgin Olive Oil

  • 3 3 Cloves of Garlic

  • Half Cup Half White Wine

  • 2 tbsp 2 Mincend Parseley

  • 1 teasp 1 Red Peppers flakes (optional)

  • 2 tbsp 2 Salt

Directions

  • Heat half the olive oil over medium-high heat in a large skillet. Place lobster tails cut-side down in the pan. Sear for 3-4 minutes until the shells turn bright red and the meat firms up. Remove and set aside.
  • Add the garlic and the red pepper flakes to the same skillet. Sauté until golden and fragrant, about 1-2 minutes.
  • Add cherry tomatoes to the skillet and cook until they soften and release their juices, about 5 minutes.
  • Return the lobster tails to the skillet, spooning the tomato sauce over them. Add white wine (if using) and let it evaporate for 2 minutes. Let cook for another 2-3 minutes or until the lobster is fully cooked.
  • Remove the lobster, shred some of the meat, and place it in the skillet. Toss the garlic.Lobster tail sauce
  • Boil the spaghetti in salted water for half the package’s recommended time. Transfer the partially cooked spaghetti directly into the skillet with the lobster and tomato sauce using tongs or a pasta fork, allowing some of the pasta water to come along.
  • Toss the spaghetti in the skillet with the lobster and tomato sauce, stirring and adding some reserved pasta water. The sauce should cling to the spaghetti.
  • Taste and adjust the seasoning with salt. Remove from heat and garnish with fresh parsley
