Ingredients

  • 4 Large Eggplants

  • 1 Large Egg

  • 1 Cup Parmesan Cheese/ or Pecorino Cheese

  • 1 Cup Grated Bread

  • 1 Clove of Garlic

  • 1/4 Teaspoon Salt

Directions
To prepare the Eggplant “meatballs”

  • Peel off the skin and scoop out the flesh, placing it into a colander to drain excess water. Use a fork or a spoon to mash the flesh and remove any remaining moisture.Removing the excess of water from the eggplant
  • Add the egg, the parmesan cheese, the breadcrumbs, and the salt and mix until everything is well incorporated.Adding the ingredients in the eggplantsn
